Tonight we had tacos for supper. While everyone else ate traditional tacos, I modify mine to make them healthier.
Instead of taco shells, I cut up a whole wheat pita and toast it in my toaster oven. I use the leanest ground beef (I’d prefer ground turkey, but Dave won’t hear of it). I mix up a little salsa, fat free or light sour cream, and guacamole and put it on top of the meat and veggies. I also skip the cheese. Seriously, I could eat it every day. (Approx. 330 calories)
Have I mentioned how much I enjoy having Tyler help me in Awana? He’s so good with the kids.

Your modified meal looks very yummy! That is a great way to make mexican healthy. We started eating ground turkey last year and we like it. To help with the transition I would mix it with extra lean groung beef until we were more used to the taste.
And what a blessing to have your son help with those precious kiddos!

Have you ever tried quinoa? I've been using it as a base for my taco salad (instead of chips) because it's SUPER high protein, very filling, and it's really good with taco meat, salsa, a sprinkle of cheese and salsa on top.
I buy it in bulk at my health food store but I've seen it at Walmart (much more pricey than the bulk aisle though!). It cooks quickly too. I wonder how the calorie count compares?
